Double Chocolate Cupcakes
Makes 24 Cupcakes
*3 cups all-purpose flour
*2 cups sugar
*2/3 cup cocoa powder
*2 tsp. salt
*2 tsp. baking soda
*2 tsp. white vinegar
*2 tsp. vanilla extract
*2/3 cup vegetable oil
*2 cups water
*8 tablespoons (1 stick) butter or margarine
*4 cups powdered sugar
*1/4 cup cocoa powder
*1 tsp. vanilla extract
*3-4 tbls. milk
*Sprinkles or jimmies for topping
1Preheat oven to 375F degrees.
2Sift together flour, sugar, cocoa, salt and baking soda. Add vinegar, vanilla, oil and water, stirring to combine to a batter consistency.
3Line muffin pan with individual liners. Pour batter into liners, about 3/4 full. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
4To prepare frosting, melt butter or margarine in a large bowl in microwave. Add 1 cup of powdered sugar and 1/4 cup cocoa. Blend with mixer. Add 2nd cup of sugar and mix. Add vanilla and 2 tablespoons milk and mix. Add 3rd cup of sugar and mix. Add remaining milk and 4th cup of sugar as needed and mix until you have received the desired consistency.
5Use a spatula to frost the cupcakes. Top with sprinkles or jimmies.
