Deviled Eggs
Makes 12
*6 eggs
*2 tbls. + 2 tsp. mayonnaise
*1 tbls. Dijon mustard
*2 tsp. champagne vinegar
*Salt and freshly ground black pepper
*2 tbls. fresh chives, snipped, for garnish
1To hard cook eggs, place in a saucepan and cover with cold water. Bring to a rolling boil. Reduce heat to low and simmer 18-20 minutes. Drain and cover with cold water immediately to stop the cooking process. Let cool and then peel shells from eggs.
2Cut eggs in half and scoop yolks into a bowl. Mash together with mayonnaise, then stir in mustard and vinegar. Season with salt and pepper to taste. Whip to achieve a creamy consistency.
3Using a pastry bag or spoon, fill the egg white halves evenly with the mixture. Garnish with chives. Keep chilled until ready to serve.
