Roast Chicken
Makes 6 servings
*1 5 - 6 lb. roasting chicken
*salt and pepper, to taste
*1 cup chicken stock
1Preheat oven to 350 degrees.
2Clean chicken, remove any inside organs and pat dry. Season chicken with salt and pepper, inside and out.
3Place chicken on a rack in a baking dish and cook for 2 hours, basting often with chicken stock.
4When cooked through, remove from oven and let stand 10 minutes before carving.
5NOTE: Use de-fatted pan juices to enhance gravy mixture.
