Pizza with Grilled Vegetables and Roasted Garlic
Makes 6 Individual Pizzas
*1 recipe Whole-Wheat Pizza Crust
*6 tbls. roasted garlic
*1 large red onion, sliced and grilled
*1 large yellow squash, sliced and grilled
*1 large red bell pepper, sliced and grilled
*12 oz. shredded mozzarella cheese
1Preheat oven to 400F degrees. Lightly coat a baking sheet with olive oil.
2Place pizza crusts on baking sheet and spread 1 tablespoon roasted garlic on each crust. Layer with 1 ounce each of grilled red onion, yellow squash and red bell pepper, and 2 ounces shredded mozzarella cheese.
3Place in oven and bake until crust is golden and cheese melts, about 10 minutes.
