Roasted Garlic
Makes About 3/4 Cups
*4 heads garlic, tops cut off
*3 cups milk
*1/2 cup extra virgin olive oil
1Preheat the oven to 350F degrees. Simmer the garlic heads and milk in a small saucepan over medium-low heat for 30 minutes. Drain and discard the milk. Place the garlic heads upright in a small ovenproof pan and add the olive oil. Cover with a tight fitting lid or aluminum foil and bake for 1 1/2 hours or until garlic heads are soft. Cool in the oil and then squeeze the cloves out of the skins. Store in the oil in the refrigerator for up to 2 weeks.
