Simple Green Salad with Vinaigrette
Makes 4 - 6 servings
*4 cups mixed salad greens (butter, lettuce, watercress, romaine, arugula, radicchio, etc.)
*1/2 cup extra-virgin olive oil
*1/4 cup balsamic vinegar
*3 tbls. fresh lemon juice
*1 clove garlic, minced
*1/2 tsp. fresh chopped herbs (rosemary, thyme, oregano)
*salt and pepper, to taste
1Wash all lettuce leaves thoroughly and pat or spin dry. Tear into bite-size pieces.
2Whisk together olive oil, vinegar and lemon juice. Add garlic and herbs. Season with salt and pepper. Whisk all together. Makes 1 cup.
3Keep greens crisp and chilled until serving. The vinaigrette will mellow at room temperatures.
4Toss the salad with dressing just before serving.
