
Simple Green Salad with Vinaigrette
Makes 4 - 6 servingsIngredients
* | 4 cups mixed salad greens (butter, lettuce, watercress, romaine, arugula, radicchio, etc.) |
* | 1/2 cup extra-virgin olive oil |
* | 1/4 cup balsamic vinegar |
* | 3 tbls. fresh lemon juice |
* | 1 clove garlic, minced |
* | 1/2 tsp. fresh chopped herbs (rosemary, thyme, oregano) |
* | salt and pepper, to taste |
Instructions
1 | Wash all lettuce leaves thoroughly and pat or spin dry. Tear into bite-size pieces. |
2 | Whisk together olive oil, vinegar and lemon juice. Add garlic and herbs. Season with salt and pepper. Whisk all together. Makes 1 cup. |
3 | Keep greens crisp and chilled until serving. The vinaigrette will mellow at room temperatures. |
4 | Toss the salad with dressing just before serving. |
