Champagne Vinaigrette
Makes 6 Servings
*2 tbls. champagne vinegar
*1 small shallot, finely chopped
*1/4 tsp. Dijon mustard
*Kosher salt and freshly ground black pepper
*1/3 cup extra virgin olive oil
1Whisk vinegar, shallot and Dijon mustard together in a small bowl. Season with salt and pepper.
2Slowly drizzle in the olive oil, whisking constantly, until dressing combines and emulsifies.
