
Butter Lettuce Salad with Pear, Walnuts, Gorgonzola & Champagne Viniagrette
Makes 6 ServingsIngredients
* | 2 ripe pears, such as Bartlett or Anjou |
* | 2 tbls. fresh lemon juice |
* | 2 heads Butter or Boston Bibb lettuce |
* | Champagne Vinaigrette |
* | 1/2 cup chopped walnuts |
* | 3/4 cup Gorgonzola cheese, crumbled |
Instructions
1 | Peel and core pears and chop into a small dice. Place in a bowl of water with lemon juice to prevent browning. |
2 | Rinse lettuce and pat dry. Rip into pieces and place in a large bowl. Add Champagne Vinaigrette to lightly coat the lettuce and toss to combine. Place on individual serving plates. |
3 | Drain diced pears and mound on top of the lettuce in the center. Sprinkle chopped walnuts and cheese over the top of the salad. Pass extra cheese at the table. |
