Glazed Ginger Carrots
Makes 6 servings
*12 carrots, cut into 1" lengths (or 2 10 oz. boxes frozen baby carrots)
*2 tbls. butter
*1/8 cup brown sugar
*1 tsp. grated fresh ginger
*pinch of salt
1Cover carrots in just enough water to cover. Cover with tight-fitting lid and cook until tender. Drain.
2Add butter, brown sugar, ginger and salt. Mix well.
3Continue to simmer over a low heat, turning often, for about 5 minutes.
