New Potato Salad With Rosemary
Makes 4 servings
*1 tsp. garlic salt
*2 lbs. new potatoes
*1/4 cup + 1 tbls. white wine vinegar
*1 tbls. fresh rosemary, chopped
*1 tsp. chives, chopped
*2 tsp. Dijon mustard
*salt and pepper, to taste
*1/2 cup extra virgin olive oil
*1/4 lb. Roquefort cheese, crumbled
1Cook potatoes in water seasoned with garlic salt until tender.
2Cut potatoes into large chunks, add 1/4 cup vinegar, rosemary and chives.
3In a separate bowl, whisk together remaining 1 tbls. vinegar, Dijon mustard, salt and pepper. Add oil and whisk dressing until it is thoroughly mixed.
4Add dressing to potatoes, sprinkle with crumbled cheese and toss.
