Chai Tea
Makes 6 Cups
*12 cardamom pods
*4 1/2 cups water
*1 1/2 cups milk
*3 cinnamon sticks, broken into pieces
*8 whole cloves
*1/4 tsp. freshly grated nutmeg
*2 tbls. Darjeeling or Irish breakfast tea leaves
*Accompaniments: sugar cubes, brown sugar, artificial sweeteners, honey, lemon slices, cream
1Crush the cardamom pods to expose seeds.
2In a medium saucepan, combine cardamom, water, milk, cinnamon, cloves and nutmeg. Bring just to a boil. Remove from heat, cover and steep for 10 minutes, stirring occasionally.
3Add the tea leaves. Bring just to a boil. Remove from heat and simmer for 5 minutes.
4Gently stir the tea and then strain. Discard spices.
5Serve tea with a variety of accompaniments.
Makes A Great Gift:
 Place Chai Tea mixture in colorful gift bags and tie with ribbon. Arrange in a holiday gift box or basket along with a traditional English teapot and silver strainer. Makes a thoughtful gift for friends, teachers, babysitters and more.
