Colonial Williamsburg Apple Relish
Makes 4 Cups
*4 tbls. olive oil
*1/2 red onion, diced
*4 tbls. granulated sugar
*3 Granny Smith apples, peeled and diced
*1/4 tsp. cinnamon
*Dash of mace
*Dash of allspice
*1 tbls. rice vinegar
*1/2 tbls. fresh chives, sliced
*1/2 tbls. fresh parsley, chopped
*2 1/2 tsp. cilantro, chopped
*Salt and pepper to taste
1Heat oil in a heavy bottom saucepan. Add onions and saute until translucent. Add sugar and quickly saute. Add apples and saute quickly with spices.
2Deglaze pan with vinegar. Toss in herbs and adjust with salt and pepper.
3Let cool and serve.
