
Colonial Williamsburg Apple Relish
Makes 4 CupsIngredients
* | 4 tbls. olive oil |
* | 1/2 red onion, diced |
* | 4 tbls. granulated sugar |
* | 3 Granny Smith apples, peeled and diced |
* | 1/4 tsp. cinnamon |
* | Dash of mace |
* | Dash of allspice |
* | 1 tbls. rice vinegar |
* | 1/2 tbls. fresh chives, sliced |
* | 1/2 tbls. fresh parsley, chopped |
* | 2 1/2 tsp. cilantro, chopped |
* | Salt and pepper to taste |
Instructions
1 | Heat oil in a heavy bottom saucepan. Add onions and saute until translucent. Add sugar and quickly saute. Add apples and saute quickly with spices. |
2 | Deglaze pan with vinegar. Toss in herbs and adjust with salt and pepper. |
3 | Let cool and serve. |
