Lamb Chops with Pomegranate Molasses
Makes 6 Servings
*6 4-oz. lamb chops, trimmed of all fat
*1 tbls. ground sumac
*3/4 tsp. salt
*3/4 tsp. black pepper
*2 tbls. pomegranate molasses (or pomegranate syrup)
1Preheat grill or broiler.
2In a small bowl, mix sumac, salt and pepper.
3Dust lamb chops on each side with sumac mixture.
4Grill or broil lamb chops until cooked through, about 3 to 5 minutes per side.
5Serve 1 lamb chop with 1 teaspoon pomegranate molasses.

  • The purple-red berries of the sumac bush are dried and ground to produce a mildly astringent, fruit spice popular throughout the Middle East. Look for ground sumac and pomegranate molasses at Middle Eastern markets or online.
