Cappuccino Cheesecake Cups
Makes 6 Servings
*1 package graham crackers, crushed
*2 tbls. sugar
*1/4 cup (4 tbls.) butter, melted
*2 (8-oz.) packages cream cheese, softened
*1/2 cup superfine sugar
*1/2 tsp. vanilla
*4 tbls. coffee liqueur, such as Kahlua
*2 eggs
*1/4 cup light cream
*Whipped topping
*6 chocolate-covered coffee beans
1Combine crushed graham crackers, 2 tablespoons sugar and melted butter until well mixed. Press mixture into bottoms and up sides of 6 oven-safe ramekins. Place on a baking sheet and bake at 350 degrees for about 8 minutes. Cool.
2Using an electric beater, cream together the cream cheese, sugar, vanilla and coffee liqueur until well blended. Add eggs and light cream. Beat until well mixed. Spoon into the cooled ramekins filling to the top of the crust.
3Reduce oven to 325 degrees. Bake cheesecakes for 15-18 minutes or until centers are set. Cool. Refrigerate 4-6 hours.
4When ready to serve, top each cheesecake with a dollop of whipped topping and a coffee bean.
