Mini Cherry Cheesecakes
Makes 12 Mini Cheesecakes
*12 chocolate sandwich cookies, such as Oreos(R)
*16 oz. cream cheese, softened
*1/2 cup superfine sugar
*1 tsp. vanilla
*2 eggs
*20-oz. can cherry pie filling
*Whipped topping
1Line a full-size muffin tin with 12 foil muffin liners. Place a chocolate cookie in the bottom of each cup. Preheat oven to 375 degrees.
2Using an electric beater, cream together the cream cheese, sugar and vanilla until blended. Mix in eggs. Spoon cheesecake batter into lined cups.
3Bake cheesecakes for 15-18 minutes or until centers are set. Cool. Refrigerate 4-6 hours.
4When ready to serve, remove cheesecake from foil liner and place on serving plate. Top each cheesecake with 2 tablespoons of cherry pie filling and a dollop of whipped topping.
