Roasted Tomatoes
Makes 12 Tomatoes
*12 plum tomatoes
*1 tbls. olive oil
*1 tsp. kosher salt
*1/2 tsp. black pepper
1Preheat the oven to 250 degrees.
2Place the tomatoes on a baking sheet and rub with the oil. Sprinkle with the salt and pepper.
3Bake until the tomatoes are shriveled and slightly darkened, about 3 hours.
  • This is a great way to concentrate the flavors of the tomato, and if you want to blister the skin, broil for 3 minutes at the end.
