Grilled Honey-Glazed Chicken & Mushroom Kabobs
Makes 4-6 Servings
*2 lbs. boneless, skinless chicken breasts, cut into 2-inch pieces
*Kosher salt and freshly ground black pepper
*1/2 cup honey
*2 tbls. olive oil
*1 tbls. Dijon mustard
*1 tsp. soy sauce
1Soak wooden skewers in water for 30 minutes. Thread chicken pieces onto skewers. Season with salt and pepper.
2Whisk together the honey, oil, mustard, and soy sauce in a bowl.
3Spray grill rack with non-stick spray to prevent sticking. Place skewers on grill over hot coals. Brush liberally with honey glaze and cook, turning skewers, until chicken is cooked through, about 25 minutes. Continue to baste often during cooking.
