
Apple & Blue Cheese Coleslaw
Makes 8 ServingsIngredients
* | 1/2 cup mayonnaise (more to taste) |
* | 2 tbls. olive oil |
* | 2 tbls. fresh lemon juice |
* | Dash Worcestershire sauce |
* | Dash celery salt |
* | 1 head cabbage, shredded |
* | 3 large unpeeled red apples, such as MacIntosh or Delicious, cored and chopped |
* | 2 ribs of celery, diced |
* | 3 oz. crumbled blue cheese, such as Roquefort or Maytag Blue |
Instructions
1 | In a small bowl, combine mayonnaise, olive oil, lemon juice, Worcestershire sauce and celery salt. |
2 | Place shredded cabbage, apples and celery in a large serving bowl. Add mayonnaise mixture and stir to combine. |
3 | Sprinkle blue cheese on top and toss lightly to combine. |
4 | Refrigerate until ready to use. |
