Sweet Potato Chips
Makes 4 Servings
*Canola oil
*2 large sweet potatoes, peeled
*Kosher salt or sea salt
*Freshly ground black pepper
1Preheat oven to 350 degrees. Grease a baking sheet lightly with canola oil. You may need more than one baking sheet.
2Slice potatoes thinly and place on baking sheet(s) in a single layer, spacing apart. Lightly brush the tops of the potato slices with oil and sprinkle with salt, pepper and nutmeg.
3Oven bake for 8-10 minutes; then turn the slices and season with salt, pepper and nutmeg. Bake an additional 5 minutes or until potatoes begin to crisp. Watch carefully so that they do not burn.
4Transfer to paper towels to drain any excess oil. Serve hot.
