Grilled Portobello Cheese Burgers
Makes 4 Servings
*1/2 cup olive oil
*1/4 cup balsamic vinegar
*1 medium shallot, minced
*4 large Portobello mushrooms, brushed clean and stems removed
*4 slices cheese, such as gruyere, cheddar or gouda
*4 sandwich or burger rolls, such as onion, kaiser or multi-grain. split and lightly toasted
*4 large romaine lettuce leaves
*4 thick tomato slices
*Red onion slices
*Assorted condiments
*Salt and pepper
1Combine olive oil, balsamic vinegar and shallot in a large zip-locking plastic bag. Add mushrooms and marinate at least one hour at room temperature, turning bag occasionally. Remove mushrooms and discard marinade.
2Heat grill to medium. Place mushrooms gill sides down and grill 4-5 minutes. Flip mushrooms and cook 4-5 minutes more, until lightly browned on both sides. Top with cheese slices and cook until cheese is melted.
3Place one mushroom on the bottom half of each roll. Serve with lettuce, tomato and onion. Supply condiments such as mayonnaise, ketchup, mustard, relish, etc., and salt and pepper for seasoning.
  • To prevent sticking, spray your grill rack with non-stick cooking spray before grilling.
