Zucchini and Yellow Squash Saute
Makes 8 Servings
*2 large zucchini
*2 large yellow squash
*4 tbls. butter
*Salt and freshly ground black pepper
*1/2 tsp. tarragon
1Cut zucchini and yellow squash into thick julienne strips.
2Melt butter in a nonstick skillet. Add zucchini and squash and season with salt and pepper. Saute until tender, but still firm, about 8 minutes.
3Add tarragon and cook for 1 more minute. Serve immediately.
