Mint Mojito
Makes 1 Serving
*4-5 sprigs fresh mint
*2 dashes simple syrup (see Notes)
*Dash of fresh lime juice
*Crushed ice
*2 oz. light rum
*Soda water
1Put mint into a highball glass. Add simple syrup and lime juice. Crush with a wooden barspoon until the aroma of the mint is released.
2Add crushed ice and rum and stir vigorously until well mixed. Top with soda water and stir again.
  • To make a simple syrup, combine 1 cup water, 1 cup of superfine sugar and 1 teaspoon fresh lemon juice. Bring to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, for 2 minutes. Cool and keep refrigerated, covered, for up to 2 weeks.
