Coconut Berry Cake
Makes 8 Servings
*1 box (18.25-oz.) yellow cake mix
*8-oz. jar raspberry or strawberry preserves
*12-oz. container whipped topping
*2 cups sweetened coconut
*1 pint assorted fresh fruit: raspberries, strawberries, blackberries, cherries, blueberries
1Prepare cake mix according to package direction for two 8" or 9" cakes. Cool on a rack.
2Spread raspberry preserves on top of one of the cooled cakes. Place the remaining cake on top. Frost with whipped topping and sprinkle coconut over entire cake top and sides. Garnish with fresh berries.
