
Three-Cheese Quesadillas with Guacamole, Fresh Tomato Salsa and Sour Cream Toppings

* | 8 large flour or corn tortillas |
* | 1 cup cream cheese |
* | 1 cup grated Monterey Jack jalepeno cheese |
* | 1/2 cup grated Cheddar cheese |
* | 4-5 scallions, chopped |
* | Guacamole |
* | Fresh Tomato Salsa |
* | Sour cream |
Instructions
1 | Divide the cream cheese over four tortillas and spread to cover. Sprinkle equal portions of jack cheese and cheddar cheese over each. Sprinkle scallions on top. Place remaining four tortillas on top. |
2 | Heat a griddle or skillet and warm on both sides until cheese melts. Cut into quarters. |
3 | Serve with Guacamole, Fresh Tomato Salsa and sour cream as toppings. |
