Chicken Nuggets with Honey-Mustard Dipping Sauce
Makes 6 Servings
*1 1/2 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
*Salt, pepper and garlic salt, to taste
*2 eggs
*1 tbls. olive oil
*2 tbls. margarine
*1/2 cup honey
*1 tsp. Dijon mustard
*1 tsp. soy sauce
1Season chicken with salt, pepper and garlic salt.
2Beat eggs in a shallow bowl. Add chicken and mix to coat. Add enough flour to make a thick batter that coats the chicken.
3Heat olive oil and margarine in a large skillet. Add chicken and saute, turning frequently, until cooked through and browned, about 15 minutes. Remove from skillet and reseason if necessary.
4Separately, whisk together the honey, mustard and soy sauce until combined. Serve sauce with chicken nuggets for dipping.
