Beef Vegetable Soup
Makes 6 servings
*1 1/2 lb. beef cubes, cut into bite-sized pieces
*1 soup bone
*salt and pepper, to taste
*4 carrots, peeled and sliced
*3 celery stalks, sliced
*1 medium onion, chopped
*2 potatoes, peeled and cubed
*1 cup beef stock
1In large stock pot, add meat and soup bone. Add water to cover and season with salt and pepper. Cook until meat is tender, about 1 hour.
2Remove bone and skim off any foam.
3Add carrots, celery, onion and potatoes. Simmer for 10 minutes.
4Add beef stock, re-season with salt and pepper and simmer for 15 minutes.
