Chicken Satay
with Peanut Sauce
Makes 6 Servings
*2 lbs. boneless, skinless chicken breasts
*1/4 cup canola oil
*3 tbls. soy sauce, divided
*1 tbls. honey
*1 clove garlic, minced
*1 tsp. ground ginger
*1 cup chunky peanut butter
*1/2 cup milk or cream
*4 scallions, chopped
*1 tbls. freshly squeezed lime juice
1Cut chicken into strips. Combine oil, 1 tablespoon of soy sauce, honey, garlic and ginger in a medium bowl. Add chicken and mix until well coated. Cover and refrigerate 4 hours or more.
2Soak wooden skewers in water for 30 minutes. Thread chicken strips onto skewers and place on a grill or in a grill pan that has been coated with non-stick spray. Grill, turning frequently, until chicken is cooked through, about 15 minutes.
3In a saucepan over low heat, stir together peanut butter, remaining 2 tablespoons soy sauce, milk, scallions and lime juice until blended to a sauce consistency and heated through. Do not overcook.
4Serve chicken satay skewers on a platter, accompanied by the warm peanut sauce for dipping.
