Mandarin Spinach Salad
Makes 8-10 Servings
*12 oz. fresh spinach, washed and torn into pieces
*11-oz. can mandarin oranges, drained
*1/4 cup red wine vinegar
*1/2 cup olive oil or canola oil
*5-6 scallions, chopped
*3 tbls. sugar
*1/4 cup slivered almonds or dry roasted sunflower kernels
1Combine spinach and oranges in a large salad bowl. Mix lightly.
2Separately, combine vinegar, olive oil, scallions and sugar together in a bowl and mix well. Add to salad and toss to coat. Garnish with slivered almonds.
