Linguini with Chicken & Peas
Makes 4 servings
*1 tbls. margarine
*1 tbls. olive oil
*1 lb. boneless chicken breasts, skinned and cut into 1/2-inch cubes
*Salt and freshly ground black pepper
*1/2 cup white wine
*10 oz. package frozen peas, thawed
*1 1/2 cups half 'n half or heavy cream
*1 cup freshly grated Parmesan cheese
*1 lb. linguini
*Garlic salt
1Melt margarine and olive oil together in a non-stick skillet. Add chicken cubes, season to taste with salt and pepper and saute chicken until light golden brown, about 8-10 minutes. Remove any excess oil. Add wine and scrape up any brown bits from the bottom of pan. Cook, until wine is reduced, about 3-4 minutes.
2Add peas and heat through. Add half 'n half slowly and then fold in cheese. Reseason with salt and pepper if necessary. Cook over medium heat until sauce thickens. Keep warm.
3Separately, cook linguini in boiling water seasoned with garlic salt, according to package directions. Drain, then toss with chicken mixture. Serve immediately.
