* | 1 medium acorn squash, halved and seeds removed |
* | 3 tbls. butter, softened |
* | 1/4 tsp. ground ginger |
* | 1/4 tsp. cinnamon |
* | Salt and freshly ground black pepper to taste |
* | 4 tbls. honey |
* | 1/4 cup chopped nuts (mixed, pecans or walnuts) |
1 | Preheat oven to 350 degrees. Place squash halves cut-side-down in a baking dish. Bake 30 minutes or until squash is tender. |
2 | Combine remaining ingredients and mix well. |
3 | Turn squash right-side-up and fill the cavities with sauce, spreading some over sides and top. Increase heat to 400 degrees. Bake 10 minutes. Baste with sauce and continue baking 5 more minutes. |
