Honey-Nut Acorn Squash
Makes 2 servings
*1 medium acorn squash, halved and seeds removed
*3 tbls. butter, softened
*1/4 tsp. ground ginger
*1/4 tsp. cinnamon
*Salt and freshly ground black pepper to taste
*4 tbls. honey
*1/4 cup chopped nuts (mixed, pecans or walnuts)
1Preheat oven to 350 degrees. Place squash halves cut-side-down in a baking dish. Bake 30 minutes or until squash is tender.
2Combine remaining ingredients and mix well.
3Turn squash right-side-up and fill the cavities with sauce, spreading some over sides and top. Increase heat to 400 degrees. Bake 10 minutes. Baste with sauce and continue baking 5 more minutes.
