Italian Stuffed Shells
Makes 8 servings
*2 eggs, beaten
*1 15 oz. container ricotta cheese
*2 cups shredded mozzarella
*1 cup grated Parmesan cheese, divided
*1/2 cup chopped chives
*1/2 tbls. salt or garlic salt
*1/8 tsp. pepper
*1 12 oz. package jumbo shells, cooked & drained according to package directions.
*3 cups spaghetti sauce
1In medium bowl, combine eggs, ricotta, mozzarella, 3/4 cup Parmesan cheese, chives, salt and pepper.
2Spoon approximately 1 tablespoon of mixture into each cooked shell.
3Arrange in 13 x 9" glass baking dish, top with spaghetti sauce and sprinkle with remaining Parmesan cheese.
4Bake in 350 degree oven for 30 minutes or until heated through.
