Pan-Fried Fish Fillets
Makes 4 servings
*2 lb. fresh or frozen cod, haddock or halibut fillets, cut into 4 pieces
*2 eggs, lightly beaten
*2 tbls. water
*1 cup dry breadcrumbs or seafood topping crumbs
*Salt and freshly ground black pepper to taste
*2 tbls. butter
*1 tbls. olive oil
*Lemon wedges
1Thaw fish, if frozen. Rinse pieces and pat dry with paper towels.
2In a shallow dish, beat eggs and water together. In a separate dish,combine breadcrumbs, salt and pepper.
3Melt butter and olive oil in a large non-stick skillet. Dip fish into egg mixture and coat both sides. Then roll in crumb mixture to coat evenly on both sides. Pan fry fish in skillet 6-7 minutes per side until fish is browned and crispy and flakes easily with a fork. Serve immediately with lemon wedges.
