Ice Cream "Soup" with Brandied Poached Pears and Chocolate Sauce
Makes 6 servings
*3 pears, such a Anjou or Bartlett
*1/4 cup sugar
*1/2 cup water
*4 tbls. brandy
*1 pint vanilla ice cream or vanilla yogurt
*8 oz. chocolate sauce
*Mint sprigs for garnish
1Peel pears and cut into halves, discarding the cores. Bring sugar and water to a boil in a saucepan. Boil for one minute, stirring constantly. Add brandy and pear halves. Poach, covered, over medium-low heat for 10-15 minutes until tender, turning occasionally. Cool in the syrup and chill in the refrigerator for at least 1 hour. Drain.
2Scoop frozen ice cream into individual shallow serving bowls and melt until it reaches a thick sauce consistency. Refrigerate until ready to use.
3When ready to serve, place one pear half in the center of the ice cream bowl. Using a squeeze bottle, swirl chocolate over ice cream and pears in a decorative pattern. Garnish with mint sprigs.
