
Ice Cream "Soup" with Brandied Poached Pears and Chocolate Sauce
Makes 6 servingsIngredients
* | 3 pears, such a Anjou or Bartlett |
* | 1/4 cup sugar |
* | 1/2 cup water |
* | 4 tbls. brandy |
* | 1 pint vanilla ice cream or vanilla yogurt |
* | 8 oz. chocolate sauce |
* | Mint sprigs for garnish |
Instructions
1 | Peel pears and cut into halves, discarding the cores. Bring sugar and water to a boil in a saucepan. Boil for one minute, stirring constantly. Add brandy and pear halves. Poach, covered, over medium-low heat for 10-15 minutes until tender, turning occasionally. Cool in the syrup and chill in the refrigerator for at least 1 hour. Drain. |
2 | Scoop frozen ice cream into individual shallow serving bowls and melt until it reaches a thick sauce consistency. Refrigerate until ready to use. |
3 | When ready to serve, place one pear half in the center of the ice cream bowl. Using a squeeze bottle, swirl chocolate over ice cream and pears in a decorative pattern. Garnish with mint sprigs. |
