Blue Cheese & Chive Puffs
Makes 2 dozen
*3/4 cup water
*4 tbls. butter
*3/4 cup flour
*3 large eggs
*2/3 cup crumbled blue cheese (such as Roquefort or Maytag Blue)
*2 tbls. fresh chives, chopped
1Bring water and butter to a full rolling boil in a large saucepan. Remove from heat and add flour all at once. Stir until mixture is smooth and thick with no lumps.
2Add eggs one at a time, stirring vigorously after each one. Stir in cheese and chives and let batter stand for 15 minutes.
3Drop 1 tablespoon of dough on a buttered baking sheet. Repeat, spacing evenly, with the remaining dough. Bake at 400 degrees until golden brown, about 30 minutes.
4Loosen puffs from the baking sheet and transfer to a wire rack to cool.
