Holiday Eggnog
Makes 8-10 servings
*3 cups whipping cream
*3 cups half & half
*12 egg yolks
*1 cup sugar
*1/2 tbls. ground nutmeg
*1/2 cup bourbon
*1/2 cup dark rum
*Ground cinnamon for topping
1Combine cream and half & half in a large pot. Bring to a simmer; do not allow to boil.
2Separately, whisk egg yolks and sugar together in a large bowl. Gradually whisk in half the hot cream mixture. Return to pot. Stir over medium-low heat until mixture thickens, about 5 minutes. Do not boil. Strain into a serving or punch bowl. Stir in nutmeg. Allow to cool and then chill completely.
3When ready to serve, mix in bourbon and rum to taste. Ladle into mugs or cups and top with cinnamon.
