Hot Chocolate Cake
Makes 4 servings
*8 oz. butter
*8 oz. semi sweet chocolate
*1 oz. amaretto
*3 eggs
*4 egg yolks
*9 oz. all purpose flour
*8 oz. powdered sugar
*4 oz. raspberry coulis
*4 scoops Ben & Jerry's vanilla ice cream
1Melt butter and chocolate over a double boiler. Fold in amaretto, eggs and yolks. Sift flour and sugar and fold into mixture until combined (do not over mix). Place into buttered 4 oz. ramekins or foil souffle cups.
2Bake at 375 degrees for 17 minutes. Should be firm on outside but still soft and not set up in the center.
3Place on a dessert plate. Garnish with coulis and ice cream.
