Spinach Flan
Makes 4 servingsIngredients
* | 2 cups fresh spinach |
* | 1 tsp. shallots, chopped |
* | 1 tsp. clarified butter |
* | 2 eggs |
* | 1 cup half & half |
* | Freshly ground nutmeg to taste |
* | Salt and freshly ground pepper to taste |
Instructions
1 | Steam clean spinach and chop. Reserve. |
2 | Lightly saute shallots in clarified butter until soft. |
3 | In a large bowl, whisk together eggs and half & half. Stir in chopped spinach, shallots and seasonings. Pour into 4 buttered molds and bake at 350 degrees in water bath for 50-60 minutes. |
