Spinach Flan
Makes 4 servings
*2 cups fresh spinach
*1 tsp. shallots, chopped
*1 tsp. clarified butter
*2 eggs
*1 cup half & half
*Freshly ground nutmeg to taste
*Salt and freshly ground pepper to taste
1Steam clean spinach and chop. Reserve.
2Lightly saute shallots in clarified butter until soft.
3In a large bowl, whisk together eggs and half & half. Stir in chopped spinach, shallots and seasonings. Pour into 4 buttered molds and bake at 350 degrees in water bath for 50-60 minutes.
