Char Grilled Black Angus Filet Mignon with Spinach Flan and Vermont "Jersey" Blue Cheese Butter
Makes 4 servings
*4 each 8 oz. beef tenderloin, Black Angus center cut
*4 oz. medallions Blue Cheese Butter
*4 each Spinach Flan
*Crispy fried onions
1Oil and season tenderloin steaks. Grill to order.
2Place 1 oz. medallion of butter on steak just before serving. Invert spinach flan on dinner plate just before serving.
3Garnish with crispy fried onions.
