Turkey Hash
Makes 6-8 servings
*4 cups roasted turkey, chopped
*4 stalks celery, chopped
*1 tsp. salt
*1/2 tsp. dried tarragon
*Pinch of nutmeg
*1 onion, finely diced
*1 tbls. fresh lemon juice
*1 cup sour cream
*1 cup mayonnaise
*1/4 cup dry white wine
*1/2 cup fine bread crumbs
*1/2 cup freshly grated Parmesan cheese
1In a large mixing bowl, combine turkey, celery, salt, tarragon, nutmeg, onion, lemon juice, sour cream, mayonnaise and wine. Mix thoroughly and let stand at least 1 hour.
2Preheat oven to 350 degrees. Butter a shallow 2-quart baking dish and spoon hash into dish. Top with bread crumbs and cheese. Bake 30 minutes or until heated through and lightly browned.
