Turkey Croquettes
Makes 10 servings
Ingredients
*4 tbls. (1/2 stick) butter
*1/2 cup flour
*2 cups milk
*Salt and freshly ground black pepper
*4 scallions, finely chopped
*5 cups roasted turkey meat, finely chopped
*1 tsp. lemon juice
*1/4 tsp dried sage
*1/2 tsp. dried thyme
*2 cups fine bread crumbs
*2 large eggs, lightly beaten
*Butter and oil (for frying)
Instructions
1Melt butter in a medium saucepan. Stir in flour and blend well. Slowly stir in milk and cook until thickened, stirring constantly, about 5 minutes. Season liberally with salt and pepper.
2Pour sauce mixture into a large mixing bowl. Add scallions, turkey, lemon juice, sage and thyme and mix thoroughly to combine. Cover and refrigerate until the mixture is firm, about 30 minutes.
3Form into 10 patties and roll them first in bread crumbs, then in beaten egg and then again in bread crumbs.
4Heat butter and oil in a skillet and fry patties on both sides until golden brown.
