Turkey Soup Stock
Makes 8 cups
*Turkey carcass, with some meat on the bones
*2 onions, quartered
*3 celery stalks, chopped
*1 carrot, chopped
*1 bay leaf
*3 sprigs fresh thyme
*Salt and freshly ground black pepper
*10 cups water
1Place turkey carcass in a large stockpot or dutch oven, breaking it into pieces if necessary. Add remaining ingredients and bring to a boil over high heat. Reduce heat to low, cover and simmer for 2 hours.
2Remove the carcass and discard. Strain the broth and discard vegetables and seasonings.
