1 | Preheat oven to 450 degrees. Butter a popover pan or heavy muffin pan and place in oven. |
2 | In a mixing bowl, beat eggs thoroughly. Beat in milk. Add flour, butter and salt and beat together until just smooth. Do not overmix. |
3 | Remove the hot pan from the oven and pour batter into the cups until two-thirds full. Return to the oven and bake 20 minutes. |
4 | Lower oven temperature to 350 degrees - DO NOT open the oven door. Bake an additional 15-20 minutes or until the popovers are firm and golden brown. (You can check for doneness after 30 minutes total baking time). |
