Makes 12 servings
*3 large eggs
*1 1/2 cups milk
*1 1/2 cups all-purpose flour, sifted
*1 1/2 tbls. butter, melted
*1/4 tsp. salt
1Preheat oven to 450 degrees. Butter a popover pan or heavy muffin pan and place in oven.
2In a mixing bowl, beat eggs thoroughly. Beat in milk. Add flour, butter and salt and beat together until just smooth. Do not overmix.
3Remove the hot pan from the oven and pour batter into the cups until two-thirds full. Return to the oven and bake 20 minutes.
4Lower oven temperature to 350 degrees - DO NOT open the oven door. Bake an additional 15-20 minutes or until the popovers are firm and golden brown. (You can check for doneness after 30 minutes total baking time).
