Peas and Pearl Onions
Makes 8 servings
*10-oz bag very small white pearl onions, unpeeled
*10-oz package frozen green peas
*4 tbls. butter
*1 tsp. fresh thyme, chopped
*Salt and freshly-ground black pepper
1Cook onions in a large pot of boiling water, about 5 minutes. Using a slotted spoon, transfer onions to a bowl and set aside to cool. Peel onions, leaving core intact.
2Reheat water to boil and cook peas for 5 minutes. Add pearl onions to water and continue to cook peas and onions for 2 minutes.
3Drain and transfer to serving dish. Add butter and thyme and toss to combine. Season with salt and pepper.
