Giblet Gravy
Makes 4+ cups
*Pan drippings from Roast Turkey
*Turkey Giblet Stock
*1/2 cups low salt chicken stock (or more, if needed)
*1/2 cup all-purpose flour
*Cooked giblets from Turkey Giblet Stock
*Salt and pepper
1Pour juices from roasting pan into a large measuring cup. Skim off fat. Add turkey stock and enough chicken stock to measure 5 cups of stock mixture.
2Heat ½ cup stock in a large saucepan over medium-high heat. Add flour and whisk until smooth, cooking about 2 minutes. Whisk in remaining stock. Bring to a boil and cook until gravy thickens. Mix in chopped giblets. Season with salt and pepper to taste.
