Raisin Compote
Makes 4 servings
*1/2 cup brown sugar
*1 cup verjus
*1 cup simple syrup (1/2 cup water + 1/2 cup sugar cooked over low heat until clear)
*1 Granny Smith apple, small dice
*1/2 cup dark raisins
*1/2 cup golden raisins
1In a hot saute pan, add brown sugar and cook until it dissolves. Add verjus and simple syrup and cook until combined. Add apple and raisins and cook until apples are soft. Reserve.
2Compote should be warm when served.
