Saffron Yellow Tomato Coulis
Makes 4 servings
*2 yellow tomatoes coarsely chopped
*2 cups vegetable stock
*Pinch saffron
*1/4 cup lemon juice
*1/4 cup sherry wine vinegar
*Salt and pepper to taste
1In a saucepan, combine tomatoes and vegetable stock. Add saffron. Cook over medium heat and reduce by half.
2In a blender, add tomato-saffron mixture, lemon juice and sherry vinegar. Liquify. Add salt and pepper to season. Strain mixture through a chinois and reserve.
