* | 10 oz. portions pork chops (4-6 chops) |
* | 2 tbls. olive oil |
* | Salt and freshly ground black pepper |
* | Blue Cheese-Potato Gratin |
* | Raisin Compote |
1 | In a medium saute pan, heat olive oil until smoking. Season and sear the pork chops on both sides for 5 minutes. Transfer chops to a sheet pan and finish cooking in a 400 degree oven for 10-15 minutes. |
2 | To serve, cut the potato gratin and divide among plates. Place the pork chop on the plates and serve with Raisin Compote. |
