Pork Chops with Blue Cheese-Potato Gratin and Raisin Compote
Makes 4-6 servings
*10 oz. portions pork chops (4-6 chops)
*2 tbls. olive oil
*Salt and freshly ground black pepper
*Blue Cheese-Potato Gratin
*Raisin Compote
1In a medium saute pan, heat olive oil until smoking. Season and sear the pork chops on both sides for 5 minutes. Transfer chops to a sheet pan and finish cooking in a 400 degree oven for 10-15 minutes.
2To serve, cut the potato gratin and divide among plates. Place the pork chop on the plates and serve with Raisin Compote.
