
Blue Cheese-Potato Gratin
Makes 4-6 servingsIngredients
* | 1/4 cup olive oil |
* | 1 lb. yellow onion, julienned |
* | Salt and freshly ground black pepper |
* | 2 lbs. russet potatoes, peeled and sliced very thin |
* | 1 lb. Stilton cheese, crumbled |
* | 2 cups heavy cream |
* | Salt and pepper |
Instructions
1 | In a medium saute pan, heat oil until almost smoking. Add the sliced onions and season. After the onions take on some color and begin to get soft, turn the heat to medium low. Caramelize, stirring often. They should be ready in 20 minutes. |
2 | In a casserole dish, layer the potatoes, onions and cheese, seasoning every layer of potato. Add cream to just under the top layer of potato and cheese. Cover with foil and bake at 325 degrees for 30 minutes. Remove foil and turn oven up to 375 degrees and bake for 15 more minutes. |
