Green Beans with Cashews
Makes 6 servings
*1 1/2 lbs. green beans
*3 tbls. butter
*Salt and freshly ground black pepper
*1 cup cashews, chopped
1Bring a saucepan of water to a rolling boil and blanch green beans 1-2 minutes until bright green. Drain immediately.
2Melt butter and season with salt and pepper.
3Place green beans in a warmed bowl. Pour butter over beans. Sprinkle chopped cashews over top. Toss well.
