Parmesan-Broiled Leeks
Makes 4 servings
*4 large leeks
*Juice of half a lemon
*4 tbls. seasoned bread crumbs
*2 tbls. freshly grated Parmesan cheese
*1 tbls. butter, cut into pieces
*Salt and freshly ground black pepper
1Trim leeks to about 6 inches long. Make a slit lengthwise through half the leek. To clean center, rinse under cold water to remove any dirt or sand.
2Arrange leeks in a large saucepan and add water to cover. Cover and bring to a boil. Reduce heat and simmer 10 minutes or until tender. Drain and pat dry.
3Transfer leeks to a buttered baking dish. Squeeze lemon over the top and sprinkle with breadcrumbs and cheese. Dot with butter. Broil for 2-3 minutes or until cheese melts. Season with salt and pepper.
